Salmon Tacos

Skin the fillet and cut into 1-inch strips. Add to bowl and pour a half-bottle of IPA or other beer over the fillet strips. Add a cup of green chile sauce like 505, and leave to marinate in the fridge for a few hours. When done marinating, dump fish, chile and beer into a frying pan and set the heat to boil off the liquid so in the end you have salmon green chile hash. While the salmon is reducing, dice up cabbage, daikon radish, cilantro and green onion to garnish the tacos.
